About Our Bread
Most of our breads are made from just flour, water, sea salt and culture in the European artisan tradition. We use organic rye, spelt and whole wheat flours. We use conventional sifted wheat flours when available organics do not meet our standards for quality.
Our breads are raised only with wild yeast, giving a unique depth of flavour, and a long shelf life and helping the body make full use of the grain’'s nutrition. Built up in slow stages, the dough starts rising at least 24 hours before it is baked. Most doughs are divided at 800g, a little larger than most artisan breads.
The heart of our business is our beautiful brick oven which bakes up to 40 loaves at a time on the hot brick hearth. You'll notice the unique quality of the crust and the satisfyingly chewy crumb, and you'll miss this bread when you run out!
CSB members are given the opportunity to choose their bread each week or have us pick for them.
Sesame Sourdough
The Sesame Sourdough is the foundation of our reputation. It's a formula we've been perfecting for years. A simple mix of wheat flour and cracked rye rolled in sesame seeds, it's elegant enough to serve to guests and yet sustaining and simple enough to eat every day.
